Harvested from our single vineyard, this Pinot Noir was fermented with natural yeasts, spending 20 months in a blend of 25% new and 75% neutral French oak barrels. Pale ruby colour. Out of the glass is an incense note, red berries, thyme, and earthy appeal. Tannis are soft and fine. The palate has red cherry, caramel and a perfumed resin. Would make good friends with charcuterie, roasts with thyme/rosemary. Ready to drink now or cellar.
How to open the wax-sealed bottle?
Don’t worry about removing the wax, just insert the corkscrew straight into the piece of wax on the top of the bottle and drill through the wax and cork as well. Now you’re ready to uncork the bottle!
